The ingredient has a total fat content of about 4.25% , a high percentage of dietary fiber at 72% and calcium at 306 mg /100g. Protein is 10%. The remaining fat includes vitamin E tocopherols and tocotrienols with approximately 30% omega 3 fatty acid. It is a very good source of antioxidants having an Oxygen Radical Absorption Capacity of 302 umoleTE/g. Antioxidants in the flour are primarily ellagi tannins which the body can convert to Ellagic acid.
